Crispy Indian Okra

  • 12 ounces fresh okra

  • 3 tablespoons of ghee or avocado oil

  • 1/2 teaspoon cumin seeds

  • 1 onion, diced

  • 1 Serrano pepper or 1-2 Thai bird chilies, minced

  • 2 cloves garlic, minced

  • 1/2 teaspoon ginger, minced

  • 1/2 teaspoon salt

  • 1/4 teaspoon turmeric


  1. Rinse and dry okra, then slice into rounds.

  2. Melt 2 tablespoons of chosen fat (reserving 1 tablespoon for later) in a sauté pan over medium-high heat.

  3. Then add the cumin seeds, brown slightly.

  4. Add pepper and onion, sauté for 10 minutes or until onions start to brown.

  5. Add ginger, and the garlic stirring frequently.

  6. Add the last tablespoon of the fat along with okra, salt, and turmeric. Stir-fry till the okra looks dry for about 10-12 minutes. Can reduce heat to medium if needed. Plate this amazing side dish along any grilled protein of your choice!
