2 large cucumbers, peeled & thinly sliced
1/4 cup red onion, sliced thin
3/4 cup red wine vinegar
1/2 cup light virgin olive oil
3 tablespoons local farm honey
1/2 teaspoon sea salt
1/2 teaspoon crushed red pepper flakes
Whisk dry and wet ingredients in a medium glass bowl.
Add sliced cucumbers and onion, incorporate well.
Cover and chill for up to four hours and serve.
Cucumbers and honey are match made in heaven. Try and see!
